Every time I visit Hokkaido Ramen Santouka, I find myself coming back to one thing: their shoyu ramen. It’s the kind of dish that feels like a warm hug—simple, soulful, and deeply satisfying.
The soy sauce-based broth is rich and aromatic, with a depth of flavor that’s both bold and refined. It’s not overly salty or heavy—just the right balance that makes you want to savor every spoonful. The noodles are perfectly cooked: firm, springy, and never soggy, holding up beautifully in the broth.
