It had its humble beginnings in a little known park beside Cuneta Astrodome in Pasay City. After serving barbecued and grilled fare, Mars Reyes started whipping up tuna concoctions in 1993. Soon enough, the little-known canteen was teeming with known foodies, police officers, professional athletes, and even movie stars. Food enthusiast Sonny Daza remembers a colonel friend’s claim, “May masarap na panga ng tuna dun, makakalimutan mo ang pangalan mo (There’s a tuna jaw dish there so delicious, you will forget your name).”

Mars became interested in creating dishes because he enjoyed good food. After 13 years in the Hotel and Restaurant business, 9 of which he served in Holiday Inn, he decided to put up his own restaurant. Though he has no formal training, he was taught by friend Sonny Daza, and chefs in Holiday Inn. This not only gave him skills in the kitchen, but also equipped him to run and manage a restaurant. 

From Cuneta Astrodome, Joseph & Jaemark’s has served in Katipunan Avenue, Makati, C-5 Taguig, and Magallanes. Everywhere they went, their reputation preceded them, and their establishments continued to be teeming with hungry tuna enthusiasts. Top food blogger Lorie Baltazar recalls her excitement upon seeing the tuna grill signage along Magallanes. “WELL! There can only be one Jaemark’s in the whole world and I know what he does best. So excited am I that I screech in delight,” says Lorie on www.dessertcomesfirst.com.

This November 2010, Joseph & Jaemark’s makes a comeback. This time, they carved out a spacious and comfortable family restaurant in Sgt. Esguerra, Quezon City. The dishes that made them famous are still there: crispy buntot (crispy tuna tail), panga (tuna jaw), and tiyan (tuna belly). As well as the highlight of these tuna creations: the secret sauce – which consists of soy sauce, vinegar, brown sugar, and margarine. Followers of this established tuna grill joint will remember this sauce all too well, and new customers can expect to be converts after enjoying a scrumptious meal. For those craving for some meat variety, loyal customers also swear by their Crispy Pata, Bicol Express, Kare-Kare, and Pork Sisig.
